Creamy Tomato Soup

Ingredients:
2 Tbsp olive oil
2 tbsp butter
1/2 cup diced onion (from 1 small, or 1/2 medium onion)
2 tbsp flour
2 cups milk
1/4 tsp baking soda
3 to 3 1/2 cups tomatoes, peeled if using fresh
2 tsp sugar
salt, to taste (I used about 2 teaspoons of coarse sea salt)

Directions:
1. Heat the olive oil and butter in a large pot over medium heat.
2. Add onions and cook until softened and translucent (not browned).
3. Stir in flour, cook one minute, then stir in milk.
4. Add baking soda, tomatoes and sugar.
5. Simmer 10 minutes, then blend (either with an immersion blender, or in small batches in a regular blender – careful, hot liquids will explode out if you overfill!).
6. Add salt by pinches, tasting as you go until soup tastes vibrant and properly seasoned.
7. Foor extra fun, saute some fresh basil and sprinkle on top before serving.
