Greens with Radishes, Pine Nuts & Raisins
Includes: Kale, Radish, Red Onion, Swiss Chard, Turnip Greens

Ingredients:
1 Tbsp oil
1/2 red onion, finely chopped
4 radishes, thinly sliced
6 cups chopped greens (can use single or combo of radish tops, kale, swiss chard, turnip greens)
1 cup organic vegetable broth
1/2 cup golden raisins
2 tbsp pine nuts
1 Tbsp balsamic vinegar
1/2 tsp salt to taste
1/2 tsp Pepper to taste
Directions:
1. Heat oil on medium high heat in sauté pan. Add red onion and radishes and cook 4-5 minutes.
2. Add broth and bring to boil. Add greens.
3. Lower heat and simmer about 10 minutes. If liquid gets absorbs add more broth.
4. Add raisins and balsamic vinegar and simmer 5 more minutes. Taste to make sure all vegetables are tender. Add more vinegar, salt and pepper if desired according to your taste.
5. Top with pine nuts and serve hot.
