Radish Salsa

Lookin’ to beat the cabin fever? Think spring and try out this salsa with chips and margaritas. (This pairs nicely together because Daikon is a natural hangover remedy.)

30 minutes

  • 2 cups chopped daikon radish (approx 1 lb.)
  • 1/2 cucumber, peeled and diced
  • 1/2 small red onion, chopped
  • 1 scallion thinly sliced
  • 1 tsp minced garlic
  • 1 Tbsp minced fresh chile, or to taste
  • 2 Tbsp freshly squeezed lemon juice, or to taste
  • 1/4 cup chopped fresh cilantro leaves
  • Salt & pepper to taste.

Put all ingredients in a medium bowl and mix thoroughly. Taste and adjust the seasoning, adding more chile, lemon, or salt as needed. Serve immediately or cover and refrigerate for up to a day.
