Daikon Radish
Keep unwashed radishes in a plastic bag where they will keep for up to 2 weeks.
2-3 Tbsp butter
1 bunch of radishes, quartered
2 cups greens (radish, arugula, braising), washed
1 Tbsp freshly squeezed lemon juice
Salt & freshly ground pepper
Melt butter in a large skillet over medium heat. Add the radishes and cook, stirring constantly until tender, but not crisp, about 5 minutes. Transfer to a bowl and let cool. Return skillet to stove.
Add greens to the skillet with wash water still clinging to the leaves. Cook over medium heat, stirring constantly until just wilted, 2 to 3 minutes. Turn off heat, add lemon juice and radishes. Stir until just combined. Season with salt and pepper.
